Vegan Month: With HECK #AD

With the help of HECK and their new plant-based range we’re celebrating world vegan month. Especially apt as the season of gluttony quickly approaches. Our challenge: to come up with some mouth-watering, vegan and veggie friendly dishes. Perfect for those with special, dietary requirements as well as folks wanting to watch the calories or eat more conscientiously.

BRUNCH

INGREDIENTS:

(For the omelet)

  • 1 shot of milk
  • 2 potatoes
  • 3 eggs

(For the stuffed Yorkies)

  • Pre-made Yorkshire puddings
  • Peas
  • Grated cheese

We’ve used HECK sweet fusion, veggie bangers

SERVING SUGGESTION:

To go Vegan take out the omelette and stuffed Yorkies and replace with hash browns and grilled mushrooms.

AVOCADO PESTO & FRESH SPAGHETTI

INGREDIENTS:

  • 1 garlic clove
  • pine nuts
  • 2 spring onions
  • baby vine tomatoes
  • 1 avocado
  • 1 lemon
  • salt and pepper
  • basil

We’ve used HECK Super Greens Saus for this one.

PESTO

  • Smash the garlic & 100g of pine nuts into a pestle and mortar
  • add chopped basil
  • fold and mix into a whole mashed avocado
  • add juice of one lemon
  • season to taste
  • mix into pasta

EGG FREE PASTA

  • Mix semolina and salt
  • Add warm water and stir to make a dough
  • Knead into a ball and turn out onto a lightly floured surface
  • Roll out dough using rolling pin or machine
  • Cut into shapes
  • Cook for 4 minutes
  • Drain
  • Sweat off the spring onions and a handful of halved baby vine toms
  • Turn off heat and add pasta
  • Pour pesto sauce over the top and mix

GRILL

The sausage and the vine tomatoes until cooked and slightly scorched on the outside. Slice and then along with the toms use to top the pasta, for a mountain of sensational taste.
