Healthy Heart: Red Summer Salad

Our Red Summer Salad is a great way to get all the family on board the veg train! Red fruits and vegetables are positively packed with antioxidants such as vitamin A, vitamin C, manganese, and fiber. Which makes them great for promoting a healthy heart. Something Dad bods in particular need to be mindful of!

With the vibrant, sweet red mix dressed in honey and accompanied with creamy mozzarella, you needn’t feel you’re being overly sensible. The strawberry and cream style combo is also great for getting kids and weaning youngster to eat a good selection of vitamin rich foods.

Ingredients:

To serve 4

•Rocket

•Sliced Mozzarella

•Extra Virgin Olive Oil

•Oregano

•6 Strawberries

•1 Sweet Red Pepper

•1 large vine ripened tomato

•A handful of pomegranate seeds

•Salt

•Malt vinegar

•Honey

Cholua Hot Sauce

Method:

•Once you’ve prepped a bed of Rocket to build your salad up on, dice up your strawberries, pepper and tomato.

•To the red mix add the pomegranate, a pinch of salt, a table spoon of malt vinegar, 2 table spoons of clear honey and 2 tea spoons of hot sauce and mix evenly. Leave to marinate whilst you prep the mozzarella

•Slice the Mozzarella and dress with a drizzle of extra virgin Olive Oil and a sprinkle of dried oregano

•Layer the Mozzarella over the Rocket

•Spoon your red mix over the top of the mozzarella and you are done

Serving Suggestion:

Although the salad stands well by itself, (especially for a quick lunch on the go), we often serve it up with another side or main if we’re eating it for Dinner (last meal of the day).

The kids in particular love this salad with Whitby Cod Goujons. A great source of protein and perfect for bulking out a salad without making it too heavy!

    Love a sweet salad! I will have to give it a try if I can find some vegan mozzarella and maybe sub the honey for agave xx

      I’ve actually done it with grilled tofu and maple syrup, it adds a nice sweet smokiness to it and tastes delish!
