I don’t know about you but for me post summer blues often mean an energy drop. Today I was craving something high energy and autumnal. Salad is a great way to get a full flavoured vit hit and high energy boost. This warm Autumnal salad will hug you from the inside out.
To serve two hearty portions of this warm, Autumnal salad you will need:
1/2 a large pomegranate
1 x baked potato
6 large Cavolo nero leaves
A handful of pine nuts
A block of tofu – dices
4 x table spoons of sweet chilli sauce
Salt, pepper, ground ginger, turmeric, paprika and olive oil to season
Method For Your Autumnal Salad
In a baking tray add your chopped squash and pre-baked potato. Toss with all of the above seasoning, making sure to coat everything evenly. Then pop into the oven at 180 for 25 mins.
Whilst your squash and potato are roasting slice up your Cavolo and add it to a hot pan. Season with a pinch of salt and a good glug of olive oil. Once it begins to crisp, chuck in your pine nuts and reduce the heat. Keep tossing them in the pan until the pine nut begin to golden, then take out and put to one side.
Next, without cleaning the pan add you diced tofu, after 5-10 mins begin to turn the cubs and slowly add in the sweet chilli. Leave the tofu to cook through and go sticky until you squash is ready.
Use the Cavolo and pine nuts as your base and create an almost nest. On top place your squash and potato. Next layer in your tofu and then sprinkle with a good helping of pomegranate.
