Ingredients:
(To serve 4-6)
- 200g oats
- 3 table spoons of olive oil
- 5 tablespoons of honey
- 1 tea spoon cinnamon
- Your choice of dried fruits, we used 2 handfuls of raisins, 1 handful of chopped apricots and 4 dried chopped figs.
Instructions:
- Mix your oil, honey and cinnamon together in a large bowl until you have a combined syrup
- Add the oats and work them into the syrup, they need to be completely and evenly absorbed in the syrup
- Add the dried fruits and evenly fold them into your oats mix
- Put your oven on to heat at 175
- Line a tin tray with baking paper and lightly oil
- Pour the mixture into the baking tray and press it down with the back of a wooden spoon to make it smooth and flat
- Use a sharp knife to score out your portions, this will help with cutting once cooked
- Put in the oven and cook until golden brown, bring out 5/10 mins early if you want them to be softer/chewy
- Bring out and leave to cool in the tray before serving
Serving Suggestion:
- Try rolling the oat mix into balls and keeping them chilled in the fridge instead of cooking; they make great pre or post work out energy balls
- For added luxury dip the cooked bars in dark chocolate and leave to set
