Nourish Bowl: Winter Warmer

This nourish bowl is the perfect winter warmer. It also uses up any left over pumpkin you might still have from Hallowe’en. But ultimately it’s a great way to inject some vitamins into your diet whilst giving your tummy a warm wintery hug!

Ingredients

To serve up four nourish bowls you will need:

•1 small or 1/2 a large pumpkin

•Chorizo (optional) to make this meal vegetarian/pescatarian replace chorizo with paprika and olive oil

•A pack of Merchant Gourmet Glorious Grains

•1 onion

•1 garlic

•400g of prawns (optional) increase your grains or replace with chopped artichoke if you want to make this dish veggie

•2-3 handfuls of pomegranate

•1 avocado

•2 limes

•2 tea spoons of ginger

•Salt and pepper to season to taste

Instructions

•To begin making your nourish bowls dice up some pumpkin and pop it in the oven at 180 degrees, dress with olive oil and leave to roast while you prep the rest of your food.

•Dice up the onion and garlic. Then pop them in a pan to fry with the ginger and juice of one lime.

•Once browned at your grains and once the bag is empty fill it with water and use this to put into the pan to cook of your grains.

•Check on your pumpkin and once its started to brown give it a light toss, then add in your sliced chorizo.

•Add your prawns to the pan with the grains and onions. Bring down the heat slightly and leave the prawns to cook off as the juices reduce.

To Serve

Once everything is all nicely cooked up, take your bowls and begin to layer them up.

Start by layering your nourish bowl with the pumpkin and chorizo, then add your grains and prawns on top. Squeeze the juice of half a lime over the top and then sprinkle with a handful of pomegranate. Next layer over your avocado (sliced) and sprinkle over another handful of pomegranate.
