The Spice Pioneer Kindly gifted us with a selection of their Spice Pods for our WOYP stories over on Instagram. So, we’ve kicked off the week with Peri Peri Cod. This is whole other level (healthy) fast food! We’ve used their recipe from the back of their Peri Peri chicken box and put it to the test.
To serve 2 or 4 as a starter:
Prep time: 15 mins Cook time: 10-15 mins
•The Green Peri Peri Spice Pod The Spice Pioneer suggests using this recipe for chicken. However, we’ve decided on a lighter version by using cod.
•2 cloves of garlic
•The juice and zest of 1 lemon
•200g of filleted and skinned cod
•To a large bowl add the spice pod, garlic, lemon zest and olive oil
•Next dice up your cod and add it to the bowl
•Use your fingers to rub the mix into the cod
•Add the lemon juice and lightly mix again, using a spoon
•Leave to marinate for 10 minutes
•Heat a pan (lightly drizzled with oil)
•Once sizzling hot delicately put the cod into the pan
•Fry for 2-4 minutes (or until lightly charred)
•Reduce the heat and flip each individual piece of cod, spooning the sauce over each piece and allow to cook for another 2-4 minutes, making sure to check that the fish has cooked through to the centre before serving.
We’ve served our Peri Cod on a bed of 5 grain rice with quinoa and a sprinkling of pomegranate. A great and simple accompaniment to this is diced cucumber, dressed in lemon mayo. The light flavours subtly balance the heat of the Peri Peri rub.
Quick, easy and fool proof. This dish would work perfectly as a dinner party starter, the flavours really get your taste buds going!
