My recipe for mushy peas is a great way to up the family’s greens, without pointlessly slogging. Follow the recipe below to make the perfect accompaniment to fish and chips. Alternatively make a large batch (minus the salt) as a quick weaning meal.

INGREDIENTS
- 1x finely chopped clove of garlic
- 3x teaspoons of dried mint
- 1x table spoon of apple cider vinegar
- 1x large tin of garden peas
- 1x tablespoon of cream cheese
- 100ml of cream
- salt and pepper
- Olive oil
INSTRUCTIONS
- Add the oil to a pan and put on a gentle heat
- Throw in your chopped garlic and lightly fry until golden
- add the mint and vinegar
- Pour in your tin of peas and mash as they cook
- Once your peas have mash down into the garlic and mint add the cream cheese and mix until the cheese has worked its way through all of the pea
- Increase the heat and slowly pour in the cream, whisking and mixing as you pour
- Once the cream has worked through the mix you should have a more liquid sauce.
- Turn the heat back down and allow the sauce to reduce
- Season to taste
- If you’d like the sauce thick add a teaspoon of flour and and a second tablespoon of cream cheese
